Breakfast Casserole ala Debi


This is one of my favorite comfort foods and is very easy to make.

A 9X9 casserole dish will feed 4 to 6 people, depending on their appetites :)
It also can be stored in the refrigerator and re-heated later.



The Ingredients
are:
1,1 pound chub of sausage.
A half bag of cubed hash
brown potatoes. (I use
O'Brian style potatoes)
1 teaspoon of onion flakes
or minced onion
6 eggs
8 ounces of sour cream
an 8 ounce bag of
shredded cheese

Instructions:
Pre-heat your oven on 375.
Lightly spray the casserole dish with cooking spray so nothing
sticks. Fry up the frozen potatoes in a skillet until lightly
browned. Transfer those to the casserole dish and set aside.
Next, cook up the sausage using the same pan ...



Once that is done, drain the sausage and mix it in with the potatoes.



Now whisk the eggs and add them to the mix.



Sprinkle with a little cheese to get nice and gooey on the inside.



Next, slather in the sour cream. I use A LOT, lol.


Add some more cheese but not a lot. You don't want the ENTIRE top
all brown just yet. Bake at 375 for 35 minutes and then take it out
and add some MORE cheese. Now cook for another 5-8 minutes or
until the new layer of cheese is bubbly.


Voila! Pretty, isn't it???
