Unstuffed Bell Peppers



Unstuffed Bell Peppers


I LOVE stuffed bell peppers and have found a way to enjoy them, without the fuss of stuffing the little buggers.

Wanna make them, too? Cool! Well here's what you'll need:

1 onion
2 bell peppers
1 tablespoon of minced garlic
1.5 pounds of ground beef
3 teaspoons of basil
1 teaspoon of oregano
1 teaspoon of pepper
1 can of stewed tomatoes
2 tablespoons of tomato paste
1 tablespoon of Worcestershire sauce



First, put about 2 tablespoons of olive oil in a skillet. Then you'll need to dice the onion and bell pepper (add the tablespoon of minced garlic as well) and then simmer them in the skillet, covered, until they're as soft as you like them. 



When that's done, add the ground beef, breaking it up just a bit. Don't mince it of tho; you want it to be kinda chunky.
Along with the ground beef, add the basil, oregano and pepper.
cover and cook (flipping occasionally) until the meat is browned.


When the meat has been browned, drain the grease from the skillet.
Next, add the can of stewed tomatoes. I add mine by hand, squishing a couple at a time into the skillet, to break them up. I also don't add the liquid from the can; I just allow what comes out when I added the tomatoes. Then add 2 tablespoons of tomato paste and the 1 tablespoon of Worcestershire sauce, and a bit more pepper.


Now mix that up and let it simmer for about 15 minutes.
This make 4 servings :)

Easy Low Carb BBQ Chicken


I LOOOOOOVE my slow cooker and by using it, it doesn't get much 
easier to make delicious BBQ chicken in it. 

To save money, I get the BIG package of legs that usually has about 10-12 pieces and I make it all up for the whole week. You can also use boneless chicken breasts, thighs or leg quarters as well - works just the same. 

Now, to make this low carb I don't use regular BBQ sauce. I use to LOVE me some "Bullseye BBQ Sauce" but since I switched to "Guys BBQ Sauce (no assembly required)", I won't ever use anything else. The taste is fantastic! 

They have 4 flavors; Original, Spicy, Smokey Garlic & HOT.
(Ooooh - no hot for me!)

I use The Smokey Garlic for my chicken and the Spicy for hamburgers.
And here's what's special about them:

All natural ingredients
No preservatives
Sugar free
Gluten free
Trans fat free
Low sodium

YAY! And ...


... 5 CALORIES AND 1 CARB PER SERVING! 

Yes! I said that!



So now that you have that OR, a BBQ sauce of your choosing, you
just chuck all that chicken into the sleeve of the crockpot ... no need to make
it all fancy, just throw it in - give it a few good shakes of garlic powder and black pepper - 
 then cover it with half the bottle of sauce. 
Lastly, sprinkle it with some onion flakes, put the lid on it and let it cook
on LOW for 6 hours.

That's it! Takes less than 2 minutes to prepare.

Easy-peasy, eh? Now go ahead and give it a try :)

It's a Meatzza!



Everyone loves pizza, but even if you don't care about the calories or carbs it contains, most of us hate how it makes us feel afterwards. Bloating is no fun! 

With the Meatzza you don't get that. It's pure, unadulterated YUM - any way you like it.
I say "any way you like it" because you can top it just as you would any other pizza keeping in mind, that your crust is actually MEAT, not bread. For the sake of this recipe, i'm showing you MY fave - The Broccoli Meatzza - but as I said before, you can top yours with the usual like pepperoni, bacon, ham or veggies, of your choice. The crust is what is going to reduce the calories and carbs, for you. 

What you'll need to know first, is how to make the crust and that can be of your choosing, as well. For this recipe, I used ground pork sausage which adds major flavor without having to add spices. But more often I use ground chicken because it has less calories. I just season it well, to kick the taste up a notch.


I'll show you ALL the ingredients first and then, how to make it.

1 pound of any kind of raw meat, ground - if not already
Italian seasoning to taste
1/4 cup of coconut flour to bind the meat
1/4 cup of grated cheese for crust
2 eggs.
Salt/pepper to taste
Pizza sauce
Grated cheese of choice for topping
Parmesan sprinkle cheese
Toppings of choice

The Crust

This will consist of 1 pound of any ground meat. ANY ground meat I say! Pork, chicken, turkey, beef, sausage ... any will do. You can even mix 2 different meats together! 

You then add 2 eggs, 1/4 cup of coconut flour (as a binder) and 1/4 cup of grated cheese. 
Zap it with some seasonings if you wish - I like to use a teaspoon of Italian seasoning and pepper. 


Now you want to squooooosh it together- mix it all up ... 


Spread it all out on your lined or greased cookie sheet or pizza pan. 
Make it about 1/4 inch in thickness. 


Now let that cook for 15 minutes on 375. 


While that's baking, Let's get the other stuff ready. I'm all about low carbs and calories so I read labels. There are many pizza sauces out there that do the job; this one having 4 net carbs and only 30 calories. Yes! 



I don't care for Mozzerella so I use a mix of extra sharp cheddar 
and Monterrey jack for the top.


3/4 bag of frozen broccoli - fresh is great too :)
Cook it  up while the crust is baking and then dice it up in smaller bits. 


Our crust is done!!!!! Doesn't this look tasty?


Now top it with your sauce; I like LOTS as you can tell.


A little cheese, just because ...


Slather it with the cooked broccoli ...


MORE grated cheese!




Now, sprinkle that Parmesan on top as well. It gives it a 
crusty brown glow when done ... you'll see :)


Pop it BACK in the oven for another 10 minutes to 
melt the cheese (or heat up your choice toppings)


Voila!!!!! It's a Meatzza!


Nutritional Info:
Per slice: 1.5 carbs and 211 calories. 
Compare that to a typical meat/veggie pizza with a bread crust 
at about 30 carbs and 347 calories!

Wow. BIG difference, huh? And you won't feel stuffed after you eat it!

Ground Turkey burgers



I use to be a HUGE fan of
ground beef hamburgers
until a year ago when I
tried ground turkey.
At first they seemed very
bland and had a strange
taste but, thru some recipe
digging I found quite a
few ways to spice them up
and will never go back.
I eventually realized that
ground beef steals the
flavor from the seasonings
and leaves your mouth
feeling greasy and a lot of
times, your stomach
bloated. Turkey does the
opposite. It allows the
flavors to come thru and you don't have that
"over full" feeling after you eat it. I also discovered
that adding soy sauce or Worcestershire sauce is a
MUST. It mimics the true flavors in beef that are
destroyed thru cooking and, adds the right amount
of salt content.

Ingredients

  • 1 (pound) ground turkey chub (makes 3 burgers if you like them fat)
  • 1 (1.0 ounce envelope) dry onion soup mix OR ...
  • try some Mrs. dash (you're choice which kind, be creative!)
  • 1/2 (teaspoon) ground black pepper
  • 1/2 (teaspoon) garlic powder
  • 1 1/2 (teaspoon) of soy sauce or Worcestershire sauce
  • 1 egg, lightly beaten
  • 3 Grans biscuits (my favorite to eat them on) or any type of roll.

Directions

  1. In a large bowl, mix the turkey with the onion soup mix, pepper, garlic powder, soy sauce, and egg. Refrigerate the mixture about 10 minutes, then form into 3 thick patties.
  2. Preheat the pan on a Med High heat, lightly oiled, just to coat it.
  3. Cook for 20 minutes, turning once, or until well done. The inside of the burgers will look whitish in color when cooked through. Serve on the Grans with your favorite toppings and side dish.    Enjoy!
